Food Chain Crisis

چکیده

Background Low-moisture foods, such as nuts, generally have been considered low risk for foodborne illness because they are consumed in a dry state. In low-moisture foods the water activity (available moisture) is too low to support microbial growth. For example, the water activity in tree nuts is generally less than 0.7. This may lead to the common misconception that low levels of pathogenic bacteria in foods such as tree nuts are not a food safety concern. However, it is increasingly recognized that many foodborne pathogens, including Salmonella and EHEC, can cause illness when present at very low levels, i.e. for illness to occur microbial growth does not need to take place. In addition, once ingested, the high fat content in tree nuts may protect pathogens from stomach acids allowing passage of viable organisms to the intestine. While a number of low-moisture foods have been associated with foodborne illness, e.g. spices, chocolate, powdered infant formula, the recognition of tree nuts as a potential source of foodborne pathogens and human illness is relatively recent.

Designing Supply Chain Systems to Cope with Catastrophes

This paper asks whether technology supported business processes currently used in supply chain management systems (SCMS) are equipped for maintaining business activity in times of crisis. It considers how SCMS accommodate the attempts of Western governments to introduce initiatives for preserving the food supply during pandemics or any other catastrophic event when there is an actual or potenti...

HISTORY OF MEDICINE Salmonella: a continuing problem

Salmonella was the archetypal food poisoning organism of the 20th century. It achieved a high public profile following the salmonella-in-eggs crisis of 1988–89, but by then had been the subject of public health concern and scientific interest for over a century. Early associated with animal foods, the advent of phage typing in the 1940s began to reveal the complexity of its environmental associ...

Systematic surveillance for management of Dioxin contamination risks in the food chain: Germany and related cases

Environmental pollutants, such as polychlorinated dibenzo-p-dioxins (PCDDs), furans (PCDFs) and dioxin like PCBs keep appearing in the food chains due to their recalcitrant environmental characteristics and due to practices of raw materials, feed and food producers. Despite emission control measures taken, which have resulted in significant reductions in environmental contamination, Dioxin-food...

Globalization, Health and the Nutrition Transition: How Global TNCs are Changing Local Food Consumption Patterns

Food consumption patterns around the world are changing. In general, individuals around the globe are consuming more edible oils and sugars than they were twenty years ago. What has lead to this nutrition transition? Scholars have identified a range of mechanisms associated with the transition, but nearly all are related to the growing influence of transnational corporations on the global food ...

An Agent-Based Distributed Scheduling For Crisis Management Supply Chain

There has been a significant increase in the improvement of response to disasters in crisis management supply chain. Due to their sudden occurrence, these disasters require a consequent quick and efficient response that depends on the ability of logistics systems to generate plans under a variety of constraints. The supply chain studied in this work is a crisis management supply chain, composed...
